Balsamic Vinegars of Modena
Favuzzi organic balsamic glaze
Our silky balsamic cream is characterized by a rich cooked grape must flavour and a smooth, nongelatinous texture. Made with only two simple ingredients (90% grape must and 10% wine vinegar) and featuring a sophisticated taste, it belongs in a superior class, like the premium balsamic vinegars that undergo a long maturing process.
Thicker and sweeter than vinegar, balsamic cream is just as well suited to vinaigrettes as it is to marinades. Use it to decorate your plates and even to add a bittersweet touch to your desserts. Try it as a surprising topping on vanilla ice cream.
Unlike most balsamic creams, which contain artificial aromas and thickeners such as cornstarch, fructose or glucose, our version has only two ingredients: 90% organic cooked grape must and 10% organic wine vinegar. Its rich taste and fluid texture are reminiscent of a traditional balsamic vinegar aged over 10 years, rather than a cream made from a simple vinegar reduction.
When they founded their vinegar factory in Italy's Modena region, Cesare Mazzetti and Marco Bombarda were building upon expertise passed down by their family from generation to generation. Today, Marco's younger brother Luca Bombarda is at the helm of the company, whose cave counts no fewer than 5,600 barrels of balsamic vinegar of Modena with a controlled designation of origin.

The world’s leading producer of balsamic vinegar, Acetum, was founded in 1906 in the Modena region, the only geographical area whose balsamics can bear the Protected GeographicaI Indication (PGI) logo. Indeed, the quality of a balsamic vinegar depends not only on its ingredients, but also on its origin, since natural factors such as the climate, terroir and air play a defining role. The company is one of the largest balsamic producers, leaving the grape must to mature naturally in wooden casks in the most authentic Italian tradition.
