ORGANOLEPTIC CHARACTERISTICS

Aroma

Very intense green fruitiness. Rich nuances reveal its great complexity. There are citrus and fruit notes, enhanced by herbal hints of thyme and mint, as well as vegetal hints such as tomato plant. Exquisite.

Taste

Fresh entry in the mouth with a green almond taste, some bitterness and medium intensity piquant. The oil is perfectly structured, long and persistent, leaving no taster indifferent. It is considered balanced, complex and harmonious.

Pairings

Best consumed raw, it is ideal for toast, fried bread and gourmet dishes, mixed and tomato salads, meats, oily fish, special dishes.

Almazaras de la Subbetica is a premier agricultural cooperative, formed in July 2007 from the merger of two prestigious and longstanding cooperatives: S.C.A. Virgen del Castillo and S.C.A. Olivarera Nuestro Padre Jesus Nazareno, both with over 60 years experience in the industry.

It has been named “the best oil mill in the world” by the World’s Best Olive Oils Organization, which compiles its world ranking from the results of the major international extra virgin olive oil competitions.

The cooperative, which is composed of 4,000 associates and whose olive groves cover around 15,000 hectares, is located in the Sierras Subbeticas Nature Reserve, an area protected by the Junta de Andalucía (regional government). The terrain, characterized by steep slopes and sheer heights is comprised of beautiful and narrow valleys.
 

The farmers have managed to overcome the many obstacles presented by the rugged terrain of the plantations and the associated increased cost of tilling and harvesting. With the modernization of farming techniques (vegetative cover, organic olive production, integrated production), and the use of small, modern machinery while maintaining commitment to the highest quality, they have managed to blend the best of tradition and latest technologies to deliver the premium quality demanded by our most exacting consumers.
