Carrot salad with raisins and pine nuts


Serves 4 to 6

  • 5 or 6 carrots
  • 1/3 cup raisins
  • 1 cup arugula
  • 2 tbsp pine nuts
  • 5 tbsp Favuzzi olive oil
  • 2 tbsp Favuzzi organic white condiment
  • Juice of ½ orange
  • Favuzzi fleur de sel
  • Pepper


  1. Peel and grate the carrots.
  2. In a bowl, combine the carrots, the raisins and the pine nuts.
  3. Wash the arugula.
  4. Prepare the dressing: press the juice from half an orange, then add the Favuzzi olive oil and the Favuzzi organic white condiment, and finish by whisking in the fleur de sel and some freshly cracked pepper.
  5. Dress the plates: start with the arugula, top with several spoonfuls of the carrot blend and finish with the dressing.
