Spring, the season of the flowering of the olive trees

The flowering of the olive trees is a spectacular sight. Every spring, the trees come into bloom, with delicate white flowers covering their branches. It's a beautiful time of year, and a reminder of the vital role that olive oil plays in Italian agriculture.

Why is flowering such a big deal? Well, it's all about the olives. Olives are the fruit of the olive tree, and they're what give olive oil its distinctive flavor. The quality of the olives is determined by a number of factors, including the weather during flowering. If the conditions are just right, the flowers will set fruit that will be perfectly ripe come harvest time.
