To create Bruschetta — pronounced broo-sket-tah — we drew on our expertise as olive oil sommeliers to select an everyday extra virgin olive oil with a delicate, balanced, versatile profile. We turned to an exceptional partner in Andalusia, one of the world's great olive oil terroirs.
This oil is crafted from the Hojiblanca, Picuda, and Picual varieties, three olives known for their balance, freshness, and complexity. Hojiblanca brings a supple texture, delicate vegetal notes, and a touch of bitterness. Picuda adds roundness, with fruity nuances and a lovely softness on the palate. Picual, more structured, contributes depth, stability, and a slightly peppery finish.
The result: an extra virgin olive oil that elevates everyday dishes without ever overpowering them.

Founded in 1954 in Carcabuey, Andalusia, under the name S.C.A. Virgen del Castillo, this agricultural cooperative became Almazaras de la Subbética in 2007, following its merger with another historic cooperative in the region.
Today, it brings together some 4,000 olive-growing families and produces superior-quality extra virgin olive oils. Its groves span roughly 15,000 hectares in the heart of the Sierras Subbéticas Natural Park, a demanding mountainous terrain that gives rise to oils of great personality.
Almazaras de la Subbética ranks among the most awarded olive oil producers in the world. It is notably the maker of a multi-award-winning organic oil regarded as one of the world's benchmark extra virgin olive oils.
