Orange Fennel Salad

Ingredients needed

  • 1 fennel bulb, thinly sliced on a mandolin
  • 90 ml (6 tablespoons) Favuzzi intense extra virgin olive oil
  • Juice and zest of one orange
  • Supreme of 2 oranges
  • Juice and zest of 1 or 2 lemons to taste
  • A dozen Favuzzi Italian olives Leccino
  • 2 green onions, thinly sliced
  • 2 handfuls baby spinach leaves
  • Some leaves of Italian parsley, chopped
  • 8 basil leaves cut into thin strips
  • Favuzzi fennel & salt and freshly ground pepper to taste
