Ingredients needed
- 1 to 1½ litres chicken broth or water seasoned with sea salt
- 1 tablespoon olive oil
- 3 tablespoons butter (1 at the beginning and 2 at the end)
- 2 French shallots or 1 medium onion, very finely chopped
- 1 to 2 garlic cloves, minced
- 2 cups Favuzzi Carnaroli rice
- ½ cup white wine or vermouth
- 2 to 3 heaping tablespoons Favuzzi truffle mushroom purée
- 1 cup grated Grana Padano or Parmigiano
- 2 to 3 cups multicoloured cherry tomatoes
- Favuzzi Coratina olive oil

Steps of preparation
- Marinate the cherry tomatoes: Cut the tomatoes in half and place them in a bowl. Drizzle with Favuzzi Coratina olive oil. Season, toss and let marinate while you prepare the risotto. You can also add 2 torn basil leaves for extra flavour.
- Heat the broth or water in a saucepan. Set aside.
- In another saucepan over medium heat, sauté the shallots and garlic in the olive oil and 1 tablespoon of butter for 6 to 8 minutes, without browning. Season while the onion and garlic are cooking.
- Add the rice and stir until all the grains are well coated in fat and become translucent. Cook for a few minutes without browning.
- Deglaze with the wine and let it evaporate while stirring.
- Add a ladleful of hot broth, stirring occasionally with a wooden spoon. Stir until the broth is almost completely absorbed by the rice.
- Repeat with the remaining broth, one ladleful at a time, until the rice reaches the desired doneness. There is no need to stir the rice constantly.
- Add the Favuzzi truffle mushroom purée and stir to combine.
- Add the remaining butter in pieces and the Parmesan cheese. Mix well and check the doneness of the rice. Turn off the heat once it has reached your preferred texture. It should be cooked but still have a slight bite. Cover and let rest for 5 minutes before serving. Taste and adjust the seasoning as needed. Divide the risotto among shallow bowls and garnish with the cherry tomatoes marinated in Favuzzi Coratina olive oil and additional Parmesan, if desired.
