Ingredients needed

  • Garlic crispy focaccia (Favuzzi)
  • 1 pint cherry tomatoes
  • 1 small red onion, thinly sliced
  • 1 cucumber, peeled, sliced lengthwise, then cut into half moons
  • 2 celery stalks with leaves, chopped
  • 2 tbsp capers
  • Fresh basil
  • Salt to taste

Steps of preparation

  1. Soak the sliced red onion in cold water with a pinch of salt for about 10 minutes to mellow out the sharpness. Drain well before using.
  2. Tear the focaccia into bite-sized pieces and place in a large bowl.
  3. Slice the cherry tomatoes in half and add to the bowl.
  4. Add the drained red onion.
  5. Add the cucumber, chopped celery (including the leaves) and capers.
  6. Tear in plenty of fresh basil and season with salt.
  7. Drizzle generously with olive oil and toss everything together.
  8. Let sit for a few minutes so the bread absorbs the flavours, then serve.

Serving suggestion

  1. Best enjoyed slightly softened, once the bread has soaked up the juices and olive oil.
