Ingredients needed
- Garlic crispy focaccia (Favuzzi)
- 1 pint cherry tomatoes
- 1 small red onion, thinly sliced
- 1 cucumber, peeled, sliced lengthwise, then cut into half moons
- 2 celery stalks with leaves, chopped
- 2 tbsp capers
- Fresh basil
- Salt to taste
- Favuzzi Coratina olive oil

Steps of preparation
- Soak the sliced red onion in cold water with a pinch of salt for about 10 minutes to mellow out the sharpness. Drain well before using.
- Tear the focaccia into bite-sized pieces and place in a large bowl.
- Slice the cherry tomatoes in half and add to the bowl.
- Add the drained red onion.
- Add the cucumber, chopped celery (including the leaves) and capers.
- Tear in plenty of fresh basil and season with salt.
- Drizzle generously with olive oil and toss everything together.
- Let sit for a few minutes so the bread absorbs the flavours, then serve.
Serving suggestion
- Best enjoyed slightly softened, once the bread has soaked up the juices and olive oil.
